Have you ever been in the mood for veggies? To be honest, I'm not in this mood much, but for some reason the other day I was, so I had an idea to put some roasted veggies together and wrap them in these mozzarella cheese wraps! The end result... PERFECTION!! I was so shocked at how delicious these wraps were! I can't believe it! And I don't even need meat when I eat these, I can eat a wrap or two and be totally satisfied. All of you who have been following me and watching my YouTube videos know that I am a meat and potatoes girl, but with these, I do not miss the meat!

You guys have got to try these wraps. It's day 2 and I'm eating one right now as I type this for my lunch. SOOO GOOD!!

The wonderful thing is you can use any medley of vegetables you'd like. I simply used what I had on hand and could not be happier!

Ingredients I used (use any vegetable medley you like):

Mozzarella Cheese Wraps (I used Crystal Farms Mozzarella Cheese Wraps 6 Count)

1/2 Lg. Zucchini OR 1 Med. Zucchini

1/2 Red Bell Pepper

1/2 Green Bell Pepper

1/2 Purple Onion

1 Handful Shredded Carrots

1 Tablespoon Garlic Olive Oil

1/2 Teaspoon Oregano

Salt & Pepper to Taste

For Homemade Basil Pesto:

1 Cup Fresh Basil Leaves

1/4 Cup Olive Oil

1/4 Cup Parmesan Cheese

1/4 Cup Almonds (feel free to use pine nuts, pecans, or walnuts)

Pinch of Salt


1. Preheat oven to 450 degrees

2. Slice veggies (Jullian style)

3. Place all vegetable in a large bowl and add olive oil, garlic, oregano, salt and pepper

4. Mix ingredients together

5. Add vegetable mixture to a baking sheet

6. Bake for approximately 15 min. or until vegetables are easily pricked with a fork and or charred bits at tips and edges.

*Make pesto while veggies cook

7. Allow to cool.

For Pesto:

While veggies are in the oven

add basil, olive oil, parmesan cheese, almonds, and salt to a food processor or blender.

Blend until pasty texture.

Put Wraps Together

Add whatever other vegetables you'd like to your wraps. I used red leaf lettuce and fresh tomatoes. Place cooled vegetables to cheese wrap and roll carefully. (wraps are fragile, roll carefully as not to tear it)
