Ingredients
3 Slices of Bacon (Diced)
3 Chicken Breast (Cut into Chunks)
1 Large Celery Root (About 2 - 3 lbs.)
5 Cups Chicken Broth or Chicken Stock
1/2 Cup Heavy Cream
2 Tbsp. All Purpose Seasoning (Sincerely Legenia All Purpose Seasoning)
1 Small Red Bell Pepper (Chopped)
1 Small Green Bell Pepper (Chopped)
1 Medium Onion (Chopped)
2 Cloves of Garlic (Diced)
1 Large Bay Leaf Or 2 Small
1 Tablespoon Butter (Optional)
Salt and Pepper to Taste
Preparation
Add diced bacon to large pot or dutch oven
While bacon is cooking chop chicken and all vegetables (onion, red and green bell peppers, garlic).
Once bacon is done, remove it from the pot, leaving the bacon fat in the pot.
Add diced chicken and season with Sincerely Legenia All Purpose Seasoning
Cook for until slightly done
Add vegetables and saute for 3 - 5 minutes
Add Chicken Broth, bay leaves, salt & pepper
Bring to a boil, reduce heat, cover and allow to simmer for 35 minutes.
Add heavy cream and return bacon bacon back to the pot. Add butter here for richer soup.
Cook for an additional 5 minutes.
Remove Bay Leaves
