Ingredients
· 1 large acorn squash
· 3 tbsp. melted ghee or butter
· 1 tbsp. garlic chopped
· 1/2 tsp. Italian seasoning
· 1/3 cup parmesan cheese
· pink Himalayan salt to taste
· pepper to taste
Preparation
1. Preheat oven to 400 degrees
2. Cut squash in half and core out the seeds
3. Cut into ½ inch slices and place on a lined baking sheet
4. Drizzle both side of the squash with olive oil and season lightly with salt and pepper
5. In a small bowl combine ghee, garlic and Italian seasoning
6. Use a pastry brush to brush seasoned ghee onto both sides of the acorn squash slices
7. Sprinkle parmesan cheese on top of squash slices
8. Place in the oven for 20 to 25 minutes
9. Remove and serve immediately.
