Cajun Shrimp & Cauliflower Rice w/ Cajun Cream Sauce
Wash and season shrimp with 2 tbs. of the cajun seasoning.
Add a drizzle of olive oil to a hot skillet
Cook shrimp on both sides for 3 minutes each
Remove shrimp when done and set aside.
In the same pan add 4 tbs. of butter and another drizzle of olive oil, califlower rice & 1 tbs. of Cajun seasoning. Cook for approx. 8 minutes or until desited tenderness.
While cauliflower rice is cooking, add whipping cream to a small sauce pan along with 1 tbs. of butter, cream cheese and the last tbs. of cajun seasoning. Let simmer until butter and cream cheese have melted about 5 - 8 minutes.
Once cream sause is done, remove sauce and cauliflower rice from heat.
How to serve:
Place a heaping about of cauliflower rice in a bowl, add shrimp on top and drizzle cream sauce over shrimp and cauliflower. Enjoy!
