Steps
In a small bowl combine mayo, sour cream, parsley, red pepper flakes, dill pickles, green onions, lemon juice, smoked paprika, monk fruit & salt. Mix well, cover and place in the refrigerator while preparing your fish.
Next, in a shallow dish combine parmesan cheese, golden flaxseed, almond flour, and Old Bay Seasoning. Mix well, and set aside.
In another shallow dish mix eggs with half & half, and all-purpose seasoning.
Cut catfish in half the long way. Roll each individual piece of fish in the egg mixture first and then in the flaxseed breading. Continue until every piece of fish is coated.
Heat oil in a skillet (350 degrees). Carefully add fillets to hot oil and fry until golden about 5 - 6 minutes. Remove fish from the skillet and allow to cool on a paper towel or cooling rack.
For best results serve immediately with spicy tartar sauce.
