Crunchy Chicken Tacos w/ Cilantro Lime Sauce

Yep! This is healthy and delicious! You will not feel guilty after eating these crunchy chicken tacos. I used almond flour tortillas from Siete (they will be located in your grocers frozen section) and talk about DELICIOUS!

Crunchy Chicken Tacos w/ Cilantro Lime Sauce

For Chicken Tacos

  1. Drizzle oil into a hot skillet, add the cooked shredded chicken and all purpose seasoning. Reduce heat to low and allow it to heat through for about 3 to 5 min. Remove and set it aside.

  2. To the same skillet, turn heat up to medium high and drizzle a little more oil in (about 1 tsp). Add sliced peppers and onions. Sprinkle with a little salt and cook until slightly tender (about 5 min.)

  3. Toss in the chopped garlic, let it cook for about 30 seconds or until fragrant.

  4. Remove veggies from the skillet and set aside.

  5. Drizzle 1 tsp.  oil into the same skillet and add tortillas .

  6. Top the tortillas with a layer of cheese. To one side of the tortilla, add the sautéed veggies, and cooked chicken.

  7. Fold one half of the tortilla over (so that its in the shape of a taco) and press lightly so that the two half stick together.

  8. Turn the tortillas over to allow both sides to cook and get crispy.

  9. Lastly, add a bit more cheese to your tacos, turn off your burner, and cover. Let it sit until your cheese is nice and melty.

  10. Enjoy!

Cilantro Lime Dipping Sauce

  3. Enjoy!
