Greek Style Cauliflower Rice w/ Grilled Chicken Kebobs
For this recipe, you'll need 5-6 wooden skewer sticks. Be sure to soak them in water for a minimum of 30 minutes before cooking.
Soak wooden skewer sticks for at least 30 minutes
Cut chicken breast into strips and add to a bowl.
Drizzle chicken with 1/3 cup of olive oil
Add Sincerely Legenia's All-Purpose Keto Seasoning and toss.
Cook chicken on an indoor/ or outdoor grill on both sides until internal temperature is 165. Remove.
For Cauliflower Rice. Add the 1 tbs. of olive oil to the bottom of a skillet. add onions, cauliflower rice, garlic, dill, salt, and pepper. Cook on med-low until tender. Remove from heat.
To plate add cauliflower rice to the bottom of your plate and place the hot, juicy chicken skewers on top. Top with a handful of parsley, feta cheese, and a light squeeze of lemon juice.

1 16 oz bag of cauliflower rice

1 garlic clove, chopped
1 handful fresh chopped parsley
⅓ cup olive oil + 1 Tbsp.
squeeze lemon juice
2 Tbsp all-purpose seasoning
¼ tsp dried dill
½ tsp pink himalayan salt
½ tsp black pepper
