Individual Mini Keto Meatloaves
Good ole home cooking keto style. These individual mini keto meatloaves are fantastic and super easy to make. This version is inspired by one of my favorite chefs, Ina Garten, but with low-carb options for us. If you are a meatloaf lover you will love this individual mini keto meatloaf recipe. Enjoy with cauliflower mash or your favorite keto vegetables!
Preheat oven to 350 degrees.
Saute onions, thyme, salt and pepper in a hot skillet over medium heat until tender.
Remove from heat and add chicken stock, Worcestershire sauce and tomato paste. Set aside to cool.
Combine ground beef, eggs, all-purpose seasoning, and cooled onion mixture in a large bowl.
Divide into 6 portions and place into small tin pans or small cereamic dishes (8 to 10 ounces).
Cook for 35 minutes AND/ OR until until internal temperature is 155 to 160 degrees.
In the meantime in a small bowl combine ketchup, golden monk fruit, all-purpose seasoning. Mix well.
When meatloaf is ready remove from oven and spread ketchup mixture on top and place back in the oven for an additional 2 - 3 minutes.
Remove and serve immediately.
*Serve with cauliflower mash, or your favorite low carb veggies.

1 tbs. avocado oil
2 tbs. Sincerely Legenia All-Purpose Seasoning
2 tbs. Worcestershire sauce
1/3 chicken stock
1/2 cup no sugar ketchup
1 tbs. golden monk fruit
