Keto / Low Carb BLT Chicken Salad

Add chicken breast to a med. sized pan and fill with water just above the chicken. Bring to a boil and allow to cook for 10 - 12 minutes. The internal temperature of the chicken should reach 165 degrees.
Remove from water, cool and dice.
While chicken is cooking add bacon to baking sheet and cook until brown on both sides. Remove, drain, cool and crumble.
In a mixing bowl, add chicken, bacon, celery and the tomatoes.
In a small bowl, combine mayonnaise, green onions, lemon, parsley, Worcestershire sauce, salt, and black pepper and mix well.
Pour the mixture over the chicken, bacon, tomatoes and celery and mix well. Refrigerate for at least an hour. Best if refrigerated over night
Serve over lettuce, as a sandwich with low-carb bread, with low-carb crackers or low-carb pita bread.

5 slices bacon, cooked and chopped
1 cup chopped fresh tomato
1 stalk celery, diced small
3/4 cup mayonnaise
1 teaspoon lemon juice
1 tsp. Worcestershire sauce
2 tablespoons green onion, chopped
1 sprig of parsley chopped
salt and pepper to taste
