Keto Broccoli Salad
This is the perfect salad for the spring and summer months coming up. Full of flavor it is sure to tantalize your taste buds!
Cook bacon. While bacon is cooking, cut broccoli leaving only the flowerets. Chop into bite-size pieces. Combine mayo, vinegar, Dijon mustard, salt, and pepper. Once the bacon is done, crumble and add to broccoli along with the dressing mixture & cheddar cheese. Mix it all together and allow to sit in the refrigerator for at least 30 minutes (the longer the better tasting). Serve cold.

- 1/4 cup olive oil mayo
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon Dijon mustard
- 3 slices of bacon
