One Pot Stuffed Bell Pepper Casserole
Combine turkey, bell peppers, onions, Italian seasoning, salt, and pepper to a large pot over high heat. Cook until vegetables are tender about 8 minutes.
Next add garlic and cook for 30 seconds until fragrant.
Reduce heat to medium-high, and add the chicken broth, tomato sauce, diced tomatoes, chicken bouillon, and soy sauce. Mix until well combined
Once the mixture starts to boil add the cauliflower rice and bring it to a boil, reduce the heat to low, and cover. Allow cooking an additional 15 minutes.
Turn off your burner and stir in 1 cup of cheese. Add the remaining cheese on top and cover to allow the cheese to melt.
Remove from heat and serve hot!

1 tbs. soy sauce
