One Pot Stuffed Bell Pepper Casserole

Steps

  • Combine turkey, bell peppers, onions, Italian seasoning, salt, and pepper to a large pot over high heat. Cook until vegetables are tender about 8 minutes.

  • Next add garlic and cook for 30 seconds until fragrant.

  • Reduce heat to medium-high, and add the chicken broth, tomato sauce, diced tomatoes, chicken bouillon, and soy sauce. Mix until well combined

  • Once the mixture starts to boil add the cauliflower rice and bring it to a boil, reduce the heat to low, and cover. Allow cooking an additional 15 minutes.

  • Turn off your burner and stir in 1 cup of cheese. Add the remaining cheese on top and cover to allow the cheese to melt.

  • Remove from heat and serve hot!

  • Enjoy!
