Parmesan Chicken and Spinach Meatballs

Steps

1. Sautee onions in a skillet until tender. Remove and let cool.

2. Next, add spinach to skillet a dash of Himalayan salt and dash of pepper. Cook until wilted,

remove from skillet and drain excess water from spinach. Let cool.

3. Combine ground chicken, onion powder, garlic powder, Italian seasoning, Parmesan cheese,

Himalayan salt, and pepper in a bowl. Lastly, add the cooled spinach and onions to the chicken

mixture. Once combined shape into 1 1/2 inch meatballs.

4. Add meatballs to the frying pan. Cook until golden brown, remove from heat.

5. Add chicken broth to skillet and bring it to a simmer

6. Add heavy cream bring to a simmer.

* For a creamier sauce, you can add cream cheese here.

7. Bring to a simmer (allow the cream cheese to melt) and add meatballs back to your skillet

8. Let simmer on low for 15 minutes

9. Done!


*You can top with more parmesan cheese if you'd like!

1/3 cup heavy cream

1/2 cup chicken broth

2 oz. cream cheese (optional)

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/4 tsp. Italian seasoning

1/3 cup parmesan cheese

1/2 tsp. Himalayan salt

pinch black pepper
