3 Easy to Make Keto/ Low Carb Snacks

Who wants KETO friendly snacks? I've got you covered my friends! Here are 3 easy Keto/ Low Carb snacks that you will be happy to have around the kitchen during those cravings. Honestly, I'm getting tired of the same old KETO approved snacks, so I'm going to de the best I can to bring you guys more snacks that we can enjoy on KETO, so that we have more of a variety.


The first snack is Loaded Deviled Eggs, these are so good. You cannot eat just one.

The second is Spicy Cajun Mixed Nuts (I got this recipe from Spicy Southern Kitchen), these are great when you want something quick with a ton of flavor and a crunch. Lastly, is pimento cheese. This version of pimento cheese is not only flavorful and rich, but it's SO SATISFYING! Try it with cucumber (my favorite), carrots, celery, or Keto/ Low Carb Crackers.

 

Loaded Deviled Eggs

Ingredients:

6 Hard-Boiled Eggs, Halved

1/2 Cup Mayonnaise

1 Tbsp. Dijon Mustard

1 Tsp. Ole Bay Seasoning

1/2 Tsp. Salt

1/2 Tsp. Black Pepper


Directions

Add cooked egg yolks and mayonnaise. Combine until smooth and creamy. Mix in mustard, Old Bay seasoning, salt and pepper. Fill in each egg white half w/ yolk mixture. Refrigerate until ready to eat. Garnish before serving.

 

Spicy Cajun Mixed Nuts

Ingredients:

2 tablespoons bacon grease

2 cloves garlic, minced

2 cups unsalted peanuts

1 cup unsalted cashews

1 cup whole unsalted almonds

1 cup pecan halves

1/2 tablespoon Cajun seasoning

1 teaspoon salt

2 teaspoons sugar

1 teaspoon black pepper


Cajun Seasoning 1/4 cup Lawry's seasoned salt

1 tablespoon onion powder

1 tablespoon paprika

1/2 tablespoon cayenne pepper

1/2 tablespoon garlic powder

1 teaspoon ground white pepper

1 teaspoon black pepper

1/2 teaspoon dry mustard

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme


Directions

1. Preheat oven to 250 degrees.

2. In a small bowl, combine all ingredients for Cajun seasoning. (You will only use 1/2 tablespoon of this mixture. Save the rest for other uses.)

3. In a small pan heat bacon grease over low heat. Add garlic and cook for 2 to 3 minutes.

4. Place nuts in a large bowl.

5. Drizzle bacon fat/garlic over nuts and toss to coat.

6. Sprinkle 1/2 tablespoon of cajun seasoning, salt, sugar, and black pepper over nuts. Toss to coat evenly.

7. Pour nuts onto a large baking sheet and place in the oven for 45 minutes, stirring every 15 minutes.

 

Pimento Cheese

Ingredients:

1 Cup Mayonnaise

4 Ounces Cream Cheese, Softened

8 Ounces shredded Sharp Cheddar

8 Ounces Extra Sharp Cheddar Cheese

1 Tbsp. Worcestershire Sauce

1 Teaspoon Chopped Garlic

4 Ounce Jar Pimentos (Drained)

1 Tsp. Salt

1/2 Tsp Black Pepper


Directions

1. In a medium bowl. mix mayo and cream cheese until smooth (either by hand or in a mixer)

2. Add cheeses, and remaining ingredients.

3. Stir until well combined.

4. Serve.
