Fresh Summertime Heirloom Tomato Salad w/ Balsamic Glaze


It’s the perfect time of year for this Fresh Heirloom Tomato Salad w/ Balsamic Glaze! The glaze is so rich and easy to make, you will be amazed. Enjoy as a full meal all by itself or enjoy as a side salad. It's perfect for your keto or low-carb lifestyle.


Ingredients:

3 lg. heirloom tomatoes

1 cup balsamic vinegar (I love Lucini)

1 tbs. capers

1/4 cup feta cheese crumbles

3 lg. basil leaves, cut into ribbons

2 tbs. light tasting olive oil

salt & pepper to taste


Instructions:

  1. Add the balsamic vinegar to a small pot and bring it to a boil. Once it starts to boil reduce the heat to low and simmer for 25 - 30 minutes.

  2. After the allotted time your glaze should have reduced significantly, you'll know your glaze is ready it's thick enough to coat the back of your spoon. Remove from heat and set aside to cool.

  3. Next, cut your tomatoes into small wedges, and place them in a bowl.

  4. Season with salt, and pepper to taste, and drizzle olive oil over the top. Toss to coat.

  5. Place your tomatoes into your serving/ salad bowl.

  6. Top tomatoes with the capers, then drizzle the cooled balsamic glaze over the top along with your feta cheese and lastly the basil ribbons.

  7. Serve cold or at room temperature.

  8. Enjoy!
