I went to Lafayette, LA a few months ago and while I was there I purchased some cracklins! They were fabulous and I've been thinking about them ever since. So I researched and decided to make some myself at home. They turned out perfect, crispy, chewy, salty, and full of flavor! You will love them.
Ingredients:
- Canola oil for frying
- 5 lbs. pork belly
- Cajun seasoning I use Keto Spice Blends Cajun Seasoning
Instructions:
Step 1
Fill your cast iron dutch oven halfway with oil and heat to 200 - 225 degrees (Use a thermometer) Oven Preheat to 200°C
Step 2 While your oil is heating, cut your pork belly into 1 1/2 inch squares.
Step 3 Place your pork belly into the oil and cook for 1 hour making sure to stir. Remove from oil and place on a paper towel to drain.
Step 4 Turn the heat up on your oil to 400 degrees. Once the temp reaches 400 place your pork belly back into the oil and cook until golden brown and the pork belly begins to float to the top of the oil.
Step 5 Remove and immediately place into a bowl with cajun seasoning and toss to coat.
Step 6 Allow cooling for 20 minutes. Enjoy!
