Fall in Love with This Homemade Pumpkin Spice Granola Recipe


Pumpkin spice and everything nice! In continuation of my Fall Series, I'm adding my pumpkin spice granola receipt to the mix. I mean you can't have a fall recipe series without having pumpkin spice granola right?


To be honest I was really amazed at how easy it is to make granola at home! I made homemade granola for the first time about a month ago. It was a vanilla nut granola and it was fabulous! So, because now I'm an expert, LOL, I just had to put together a pumpkin spice granola for the fall season.


The beautiful thing about granola is that you can tailor it to your liking. Add in or take out whatever you'd like. That's what I did with this batch of granola, I did not want as many raisins, so this batch I decided to add in fewer raisins than usual and it still turned out great. So if you are not fond of the pecans and would rather have walnuts simply switch them out. Tailor it to your liking.


Granola is great to eat in so many ways. In this version of the pumpkin granola I use pumpkin seeds with the shells on, you can swap them out and use seeds without shells. I prefer to use the seeds without shells when I'm going to add my granola to milk, yogurt, or oatmeal. When I'm using them for little snacks I enjoy the pumpkin seeds with shells on. Here are a few ways to enjoy your Pumpkin Spice Granola

  • Just granola as an enjoyable snack

  • In milk, like cereal

  • Add on top of yogurt

  • Add to a fruit bowl

  • Top your pancakes, waffles, or crepes

The possibilities are endless! Either way, you choose to eat your granola, rest assured it can be one of the healthier snacks to indulge in without having to worry about the guilt afterward.


Once you have baked

your granola allow it to cook and store it in an airtight container


Ingredients

2 cups rolled oats

2 tsp. Pumpkin pie spice

1/3 cup pecans

1/4 cup pumpkin seeds

1/4 cup raisins

3 Tbs. maple syrup

1 tsp. Vanilla

1/2 tsp salt

2 tbsp. Coconut oil


Directions

  1. Preheat oven to 350 degrees

  2. Add all ingredients to a medium-sized bowl and mix

  3. Spread granola into a single layer on a baking sheet lined with parchment paper

  4. Place in the center of your oven rack and bake for 20 minutes. *Halfway through baking give the granola a mix

  5. Remove the granola from the oven and allow it to cool.

  6. Once cooled store your granola in an airtight container
