My Keto Bayou Skillet is filled with crab, shrimp, and andouille sausage. This entire recipe can be made in one skillet. I recommend fresh crab, but you can definitely use canned crab if you'd like. I hope you all enjoy it!
*A cast iron skillet is suggested for this recipe
Ingredients:
8 oz crab meat
12 oz peeled and deveined shrimp medium
3 oz (1 link) andouille sausage, diced
2 strips bacon, crumbled
1 onion small, diced
½ cup red bell pepper, diced
½ cup green bell pepper, diced
1 celery stalk, diced
16 oz cauliflower rice
6 oz white mushrooms sliced
½ cup heavy cream
1 ½ Tbsp Cajun Seasoning
8 oz extra sharp cheddar cheese, shredded
8 oz Monterey jack cheese, shredded
1 Tbs avocado oil
2 garlic cloves, chopped
1 red chili pepper, chopped, chili pepper is optional
1 stalk of green onion, chopped
Instructions:
Step 1 Cook bacon until crispy, drain, and set aside. Crumble once cooled.
Step 2 Pre Oven to 350 degrees
Step 3 To a hot skillet add all of your chopped veggies, onions, red and green bell pepper, celery, mushrooms, and cauliflower rice. Saute until tender.
Step 4 Next, add in your chopped garlic and chili pepper. Cook until fragrant
Step 5 Turn off the burner. Now add your heavy cream, crab, sausage, and 1/2 of each of the cheese. 4 oz. cheddar and Monterey Jack.
Step 6 Turn off the heat and mix to incorporate the cheese throughout.
Step 7 Place in the oven and cook for 20 minutes or until golden and bubbly.
Step 8 Remove from oven and top with crumbled bacon and chopped green onions.
Step 9 Serve Hot.
