I was simply getting tired of the same old pork rind-crusted chicken tenders. So I created this recipe for crispy low-carb chicken tenders using iso-pure unflavored protein powder. Adding parmesan cheese, seasoning and a few other ingredients make for tender juicy tenders.
Ingredients:
- lb chicken tenders - ⅓ cup mayo - 1 egg - 1 tsp salt - 1 tsp pepper - 2 scoops of unflavored protein powder - ½ cup parmesan cheese - 2 Tbs Sincerely Legenia All-Purpose Seasoning - 2 cups avocado oil
Directions
For the Marinade:
Step 1 Season chicken tenders with all-purpose seasoning, toss together, and set aside. Step 2 In a medium-sized bowl, add egg, mayo, and 1 tsp. salt, 1 tsp. pepper and mix together. Step 3 Add seasoned chicken tenders to the mayo mixture and coat. Cover and marinate in the refrigerator for a minimum of 30 minutes up to 24 hours. Step 4 When you are ready to cook your tenders, add protein powder, parmesan cheese, and 1 tsp. salt and pepper to a mixing bowl. Mix together until well combined. Step 5 Add marinated chicken tenders to the protein powder mixture one at a time to coat. Set aside to rest on a cooling rack for at least 5 minutes (your coating will stick to the tenders better) until ready to cook. Step 6 Add avocado oil to a skillet to heat up. Your temperature should be between 365 - 375 degrees. Step 7 Once your oil is ready slowly drop your tenders into the oil (make sure you place them in the oil away from you). *Do not overcrowd your pot Step 8 Allow your tenders to cook until golden brown, approximately 8 - 10 minutes. Step 9 Continue to cook the remainder of your tenders in batches. Step 10 Place cooked chicken in a foil pan lined with paper towels to drain. Step 11 Finish by sprinkling additional all-purpose seasoning on top of the hot chicken. (Optional)
