Fresh Homemade Low Carb Tomato Soup

Tomato soup is good anytime of the year and this recipe proves it. You are gonna love my low carb tomato soup recipe. It's great for those that aren't fans of the soup, one bite and you will be! Paired with low carb grilled cheese, this makes a perfect quick and easy meal. Who knew tomato soup could be so good!

Ingredients:

3 lg. tomatoes, diced

1 sm. onion

2 tablespoons butter

2 garlic cloves

3 fresh basil leaves

2 cups chicken stock

¼ cup heavy cream

1 tsp. low carb sweetener (I used monk fruit)

1 tsp. monk fruit

1 tsp salt

½ tsp pepper

parmesan cheese (optional for topping)


Directions

  1. Add butter, tomatoes, onions, salt, and pepper to a large pot. Cook for approximately 8 minutes

  2. Add chicken stock, garlic, fresh basil, and monk fruit. Stir and cook for 20 minutes.

  3. For a smooth textured soup use an immersion blender and blend until it's your desired texture OR if you prefer a chunky soup simply leave your soup as is.

  4. Next stir in your heavy cream.

  5. Lastly, you can add parmesan cheese for additional flavor and a few fresh basil leaves for garnish.

Serving Size 1.5 cups
